I was in the Chianti Classico region and among my winery tours through the villages, I was guest of Giovanella Stianti Mascheroni, deus ex machina of the historic ” Castello di Volpaia”. After our visit and a long talk with her, she stated: ” For lunch you must to go to Dario Cecchini”: http://www.dariocecchini.com/en/antica-macelleria/

In a moment I found myself a few miles downstream in front of a giant “statue” of the so-called  “Florentine” (the great steak of Firenze).

It is the symbol of the butcher Dario Cecchini, an institution here for his art in cutting and cooking the different parts of cattle. Dario, offers different menù, even the fast food one “darioDoc” hamburger included.

I go for the complete one: “Officina della Bistecca ,” in which the great Dario gives the best of himself .
How it works: you enter the butcher shop, where you can enjoy a rich aperitif with house red wine, salami, crostini with olive oil and other snacks. Then you can take place in the hall on the first floor with just one long table in an atmosphere of boisterous conviviality. The waiters Dario make you feel at home, make sure that your glass is never empty with an irresistible Tuscan accent!
The menu:

  • raw meat
  • carpaccio of ass (!)
  • and so on with 3 different cuts, 3 different steaks

The Florentine steak is cooked on the giant grill by Dario himself, who finished his work, showing two huge steaks with his hands them screaming their names to the guests (see pic below)
