A tour developed between the provinces of Siena and Arezzo in Tuscany, Central Italy, to enhance the famous Chianina meat, its origins and its correct use in the kitchen. This is the goal of the 4 dinners planned from December 2021 to March 2022 with the participation of 4 local chefs: Katia Maccari, Emiliano Rossi, Walter Redaelli and Lorenzo Pisini and organized by the Consortium of ‘Vitellone Bianco dell’Appennino Centrale PGI’ and by the ‘Amici della Chianina’ association as a special edition of the ‘La Valle del Gigante Bianco’ project launched in 2005. On each occasion, the 4 chefs will work together to propose at least one dish each to be paired to local wines, and will be well presented by the professional food journalist Claudio Zeni.

The first appointment was held on Friday 10 December at the ‘I Salotti del Patriarca’ restaurant (chef: Katia Maccari) in Chiusi, in the province of Siena. Here’s the menù:

  • geometry of Chianina language, onion petals, roots, baby corn, pumpkin kimchi, beetroot mayo, green sauce, blueberry gel, caper crumble (by Lorenzo Pisini);
  • Fusilloni pasta with white Chianina ragout, cream of leeks, artichokes and smoked ricotta (by Katia Maccari)
  • Chianina tortelloni on red onion sauce (by Emiliano Rossi)
  • Chianina cheek glazed with gingerbread polenta (by Walter Radaelli)
  • Declination of tiramisu (Katia Maccari).

All interpretations have been very well balanced in order to enhance what is the main ingredient: a local excellence such as Chianina which, for the occasion, had been paired with Sangiovese-based wines from the Orcia Wine Consortium. A territorial and particularly coveted combination: between Chianina and the rosé and reds of the Orcia Valley which offer the right structures and the perfect dose of acidity to accompany each bite harmoniously. The dinner was enriched by the aromas of grappa Deta served after the dessert.

The next appointments will be: Friday 14 January at Osteria ‘Il Teatro’ in Cortona, in the province of Arezzo. On Friday 4 February in Bettolle, province of Siena, hosted by Walter Redaelli’s restaurant, while the closing date is set on Friday 4 March at the ‘Logge Vasari’ restaurant in Arezzo. Each appointment will see the participation of Andrea Petrini, director of the Consortium for the protection of Vitellone Bianco dell’Appennino Centrale IGP.
