Italy is one of the main truffle countries where local conditions allow for all types of tartufo to be enjoyed all the year long. More specifically, Gubbio and Umbria region in general is one of the main lands to get the best expressions.

On the occasion of the 42nd truffle fair of Gubbio in Umbria, Central Italy, the Tuber Cup has been launched: a compeition between local chef and producers to reward the best truffle sauce organized by the local promotional ‘Host Association’.

I am honored to be part of the judging panel and I am very happy to share the results along with the ctiteria.

The criteria

Each sauce as been evaluated with a 1to3 score in terms of:
texture – appearance – balance – finish – originality

 

The winners

1:chef Linda Cannone with a sweet sauce

(custard, mascarpone cheese, black pepper, nutmeg, white truffle)

 

2: Leonardo Ghirelli – “dei Consoli” restaurant in Gubbio

(Black truffle, veal brian, chestnut, grilled garlic, anchovies, laurel, rosemary, olive olive, seeds oil, meat broth, salt, black pepper)

 

3:  Michele Mosca of “Delizie tipiche umbre di Michele Mosca” of Gubbio

(mushrooms, white truffle, black truffle “uncinato”, salt, garlic, black pepper)
